Instructions
To prepare Peanut Sauce place Garbanzo Beans , Peanut Butter , Lime Juice , Tarmari , Sriracha , and Vegetable Broth into a blender
Cook Pad Thai Noodles according to the instructions on the package and set aside
Heat Olive Oil over medium heat in a large wok
Add Garlic , Bell Pepper , Onion , Sweet Potato , and Pea Pods (approx. 5 mins.)
Meanwhile, add Quinoa to a small skillet
Toast until golden (2-3 min.)
Once Vegetables are cooked, add cooked Noodles to wok
Pour in Peanut Sauce and mix until everything is evenly coated If sauce is too thick, thin out with a little bit of water
Serve dish in bowls, topped with Lime Wedge , Chopped Peanuts , Cilantro , and Toasted Quinoa
