mild or medium Cheddar
Cook the Red Rice Macaroni according to package.
Drain pasta and move into bowl or skillet
Create roux with 2 tbsp. unsalted butter, 2 tbsp. flour, 1 can evaporated milk. Whisk until thickened
Stir in Cheddar cheese until completely melted. Serve hot.
Cooking Tip: Rinse under cold water after draining to stop the cooking.
