Healthy Gourmet Mung Bean Pesto Pasta

  • 1/2 box of Explore Cuisine Mung Bean Fettuccine
  • 2 handfuls organic kale
  • 10 garlic cloves
  • 2 large spoonfuls of vegan pesto
  • Olive oil
  • Handful pine nuts
  • Cayenne pepper
  1. Boil water & add in your delish mung bean rotini
  2. Stir every minute or so and cook for around 7-9 mins
  3. While your pasta is cooking, grab a pan and heat up a bit of olive oil on medium heat
  4. Add in your garlic and sautée until golden followed by your kale
  5. Place in bowl on the side (your pasta should be done around the same time)
  6. Put a bit more olive oil in the pan and toast your pine nuts lightly (should only take 1-2 mins - be careful not to burn them)
  7. Add your pasta followed by 2 large spoonfuls of vegan pesto, your kale and garlic mixture, a bit of cayenne & top with your pine nuts

Cooking Tip: Rinse under cold water after draining to stop the cooking.
