Instructions
In a braiser over medium heat, add carrots, sweet potatoes, garlic cloves, salt, vegetable stock and water. Season
Cook for 12-15 minutes until carrots and sweet potatoes are softened
Remove to a blender, blend until smooth
Add grated yellow cheddar cheese, blend until smooth
Add sweet potato mixture back to braiser, bring to a simmer, add fusilli and cook stirring occasionally for 15 minutes
Serve immediately
