Chickpea Fusilli with Sweet Potato Carrot Mac & Cheese

    • 8 oz Explore Cuisine Chickpea Fusilli (1 box)
    • 3 Carrots (peeled and grated)
    • 2 sweet potatoes (about 2 cups) (peeled and grated, about 2 cups)
    • 2 garlic cloves (peeled)
    • 2 cup vegetable stock
    • 2 cup water
    • 8 oz yellow cheddar cheese ( grated)
    • Kosher Salt (to taste)
    1. In a braiser over medium heat, add carrots, sweet potatoes, garlic cloves, salt, vegetable stock and water. Season
    2. Cook for 12-15 minutes until carrots and sweet potatoes are softened
    3. Remove to a blender, blend until smooth
    4. Add grated yellow cheddar cheese, blend until smooth
    5. Add sweet potato mixture back to braiser, bring to a simmer, add fusilli and cook stirring occasionally for 15 minutes
    6. Serve immediately
