Caprese Pasta Salad

  • 8 oz Explore Cuisine Chickpea Fusilli (1 box)
  • 1 lb cocktail tomatoes (about 18 quartered)
  • 8 oz marinated mozzarella balls or vegan mozzarella
  • 1/2 cup chopped basil
  • 1/4 cup pesto (store bought or home made)
  • 3 tsp balsamic vinegar
  • 1/2 tsp Salt
  • 1/8 tsp Black pepper
  1. Cook the pasta following package instructions. Drain well and set aside.
  2. Transfer the pasta to a large bowl, add the rest of the ingredients and toss well.
  3. Refrigerate until ready to serve.

Cooking Tip: Rinse under cold water after draining to stop the cooking.
