- 3 shallots, thinly sliced
- 3 carrots, peeled, thinly sliced diagonally
- 2 garlic cloves, grated
- 1 tbsp ginger, peeled, grated
- 1 orange bell pepper, seeded, thinly sliced
- 1 green zucchini, thinly sliced into rounds
- 1 yellow zucchini, thinly sliced into rounds
- 1 serrano chili, thinly sliced into rounds
- 1 bunch Thai basil (leaves only)
- 3 scallions, thinly sliced, whites and greens separated (greens for garnish)
