BREAKFAST PASTA

    Ingredients
    • 8 oz Explore Cuisine CHICKPEA FUSILLI (1 box)
    • 1/2 avocado (pitted and peeled)
    • garlic clove (minced)
    • 1 small handful cilantro (roughly chopped)
    • 1/2 tbsp lime juice
    • 1 tbsp olive oil
    • 1 fried egg (if desired)
    • roughly chopped cilantro (to finish)
    Instructions
    1. Cook pasta according to the package.
    2. While pasta is cooking, add the avocado, garlic, cilantro, lime juice, and olive oil to a blender and blend well.
    3. When the pasta is cooked, save 2 tablespoons of pasta water and drain well.
    4. When the pasta is cooked, save 2 tablespoons of pasta water and drain well.
    5. Season with salt and pepper to taste and top with a fried egg and cilantro, if desired. Enjoy!

    Cooking Tip: Rinse under cold water after draining to stop the cooking.
