- Cook Risoni to instructions on box
- Mix walnut oil, lemon juice, and garlic then set aside to marinate for 5 minutes.
- Toss risoni with oil mixture.
- Season with salt and pepper. Gently fold in figs, mozzarella, walnuts, and mint. Finish with a few more grinds of pepper.
Note: substitute dried figs if fresh are not in season.
