Instructions
- Boil water & add in your delish mung bean rotini
- Stir every minute or so and cook for around 7-9 mins
- While your pasta is cooking, grab a pan and heat up a bit of olive oil on medium heat
- Add in your garlic and sautée until golden followed by your kale
- Place in bowl on the side (your pasta should be done around the same time)
- Put a bit more olive oil in the pan and toast your pine nuts lightly (should only take 1-2 mins - be careful not to burn them)
- Add your pasta followed by 2 large spoonfuls of vegan pesto, your kale and garlic mixture, a bit of cayenne & top with your pine nuts
Notes
Cooking Tip: Rinse under cold water after draining to stop the cooking.
