Who doesn’t love a food that is SUPER? Superfoods are packed with nutritional benefits and are often loaded with antioxidants,  vitamins and minerals. Not only are they healthy for you, they are usually low in calorie and rich in flavor.

Tired of hearing about kale and quinoa (don’t discount them; they are still on top)? Well,  there’s a new superfood in town ready to take center stage on your plate: sorrel.

Try it at home with this simple two-step Berry Freekeh Salad recipe that your family will love.

Ingredients:

2 cups finely chopped sorrel

1 cup uncooked freekeh

2 cups dried cranberries

1 cup mandarin oranges

1 cup blueberries

2/3 cup almonds

1/2 cup crumbled reduced-fat

feta cheese

Preparation:

Cook freekeh according to package directions and cool.  Combine with all other salad ingredients and mix well.  Optional: Add a little vinaigrette dressing (vinegar, honey,  olive oil and pepper). Serve immediately or chill in the refrigerator.
