The heart of this Mediterranean Pasta Casserole is the gluten-free pasta.  I bet you might recognize this brand, as I use it a lot in my recipes. We LOVE Explore Cuisine.

This brand and THIS particular pasta, the Organic Chickpea Fusilli is my favorite! Why you ask?

This gluten-free pasta is made from chickpeas, so it is packed with protein.  Honestly, I LOVE that aspect!

It is certified gluten-free and made in a dedicated gluten-free facility! It also carries the Vegan Society seal of approval.

We love Explore Cuisine and often use their pastas in our recipes. You might remember our Kid Friendly Pasta Salad recipe which also used the Fusilli noodles!

Instructions
  1. Prepare the pasta, per the directions on the box.
  2. In a 9x13 oiled casserole dish add in cooked pasta and remaining ingredients.
  3. Bake at 350 degrees F for 20 minutes.
  4. Top with additional parsley for a pop of color and ENJOY!
