Pasta has ruled roost as the go-to food for athletes for decades, and for good reason.  It’s quick and easy to prepare, and one of the most ubiquitous sources of carbs on the market.  Traditional pasta is low in fiber,  and makes for easy digestion before a race or after a hard workout. I first encountered Explore Cuisine’s “alternative pastas” in my athlete swag bag at last year’s IRONMAN World Championship.  I whipped up an edamame spaghetti with roasted vegetables,  and posted it on Instagram, with hungry comments to follow from my fellow athletes.
